Fondue Bourguignonne

Fondue Bourguignonne is a specialty originating in Switzerland, although the term's etymology suggests a French origin. It consists of carefully prepared small pieces of meat—usually beef, but also veal, chicken, or pork—cooked in boiling vegetable oil and served with various sauces.
Each diner, provided with a divided plate for sauces and a long-handled fondue fork, prepares the dish for themselves. A bite of meat is placed on the fork and dipped into the pot; the immersion, and therefore cooking, time is brief but chosen by the diner according to their preference for rare or well-done meat. Once removed from the pot, the bite is dipped into one of the available sauces.
